Weekend Cooking- A Pinterest Trifecta

This post is part of Beth Fish Reads' Weekend Cooking.  If you have anything related to food, cookbook reviews, novel or non-fiction book reviews, recipes, movie reviews, etc., head over to Beth Fish Reads and add your post. Or, if you want to read food related posts, head over to read what some interesting people have to say about food.

I haven't had much luck with my Pinterest recipes lately. (I don't care how many times you tell me that you can make a KFC clone by baking chicken instead of frying it, I'm here to tell you that is NOT true. I know this through trial-and-error and I've given up trying.)

My son works very late every day, so I like to make a nice meal on the weekend. I had pinned a recipe for Skillet Steaks With Gorgonzola Herbed Butter, and when my nephew told me that his mother had made it and everyone loved it, I'd thought I'd try it.

We live in NYC and can't grill outside, so pan frying is how I make our steaks. I usually do filets this way and hadn't yet tried a ribeye. I was a little leery about it, but it turned out beautifully. I pulled them off at the just the right time, something I can have trouble with, even with a meat thermometer. The recipe came from Add a Pinch.com

I started the dinner with another Pinterest recipe I found for Morton's Iceberg Wedge Salad. My husband loves the wedge salad, even though I prefer romaine to iceberg lettuce. It was so easy to make and the dressing was very tasty. One of the ingredients is  Durkee's Famous Sauce, which I had my doubts about finding in a grocery store here, but there it was just sitting on the Food Emporium shelf near the mayonnaise. It's not a healthy salad for sure, but it's the salad you will find on every steakhouse menu. This came from Delish.com, where I've found a few recipes lately.

I usually make baked potatoes to go with steak, and I found this recipe for Quicker Baked Potatoes that you slice in half, roll in olive oil and salt and bake on parchment paper on a baking sheet. I added black pepper too. This worked so well, and took so much less baking time. We had leftovers, and the next day I sliced them, threw them in the oven to crisp up, and made steak fries to go with Katie Lee's Logan County Hamburgers. They were fantastic the next day as well. This came from She Wears Many Hats.

So that was my trifecta of successful Pinterest recipes. This meal was a huge success, and I know with three men in the family, I will be making this one again.

    1. Me too, it is so simple and cuts down on the oven time.

  3. I have to make steaks next weekend for my son's birthday. He is a red meat fan but we've been vegetarians for a long time. I struggle with cooking and grilling and will have to check out your pins.

I recently made and posted about chocolate chip cookie cups that turned out beautifully! It is hit or miss with Pins though. Always good to keep trying.

  4. I am terrible with making stuff I pinned, but I am very successful with my new recipe project and make at least one new recipe per week. Mostly from weekend cooking posts I read or a couple of other veggie blogs. Somehow I love looking at Pinterest but recreate very little myself.

    1. When we lived in central New York, I used to have New Recipe Week every season, and everybody loved it. We usually got four or five pretty good recipes out it and it was fun to be so creative.

  5. Diane, great work. I generally like to know what sort of cook the person is before trying their recipes - so I tend to try ones from blogs I follow regularly. Cheers

  6. I agree, the best recipes come from cooks we have gotten to know online.

  7. They all look wonderful! And those quicker baked potatoes (was it JoAnn who turned me on to them or you?) are so good that I'll never bake potatoes any other way. The wedge salad is such a classic steakhouse side that you just have to have it once in a while.

  9. Hi Diane,

I like the look of your baked potatoes with a difference, although it looks as though you were using sweet potatoes, which are still not all that widely used or available, here in the UK.

Over here, a baked potatoe is usually considered as a meal in itself. We generally split a whole potatoe open and fill it with a variety of toppings, from grated cheese, through to prawns, or baked beans. With the addition of a very small portion of side salad, that would probably be the meal.

I love baked potatoes, but only so long as the insides are light and fluffy and the outer skins crisp and crunchy. Consequently, I would never follow the trend here to blitz potatoes very quickly in the microwave. Mine are always oven baked, on a very high heat.

Thanks for sharing your all new menu choices and have a good weekend,

    Yvonne

    1. Yvonne- It's interesting that baked potatoes are more of a meal in the UK. I do agree with you, I like them fluffy on the inside and crispy on the outside, and I'm not a fan of microwaving potatoes either. I hope you have a good weekend as well, thanks for stopping by.

  10. Those potatoes are simply the best! I make them that way all the time now... just did sweet potatoes last night. The pin promising KFC chicken keeps popping up, but it seemed too good to be true. Thanks for letting me know it is. I've just deleted it from my board.

    1. Yep, if you're going to make KFC, it's got to be fried. I'm going to try the sweet potatoes this way someday.

  11. I pinned that recipe for baked potatoes. Glad to see it works well! The steaks with Gorgonzola butter sound very tasty too.
